Sized for a comfortable fit in a full size (18" x 26") sheet pan, this Flexipan comes with a stainless steel frame for support (not attached but designed to fit the Flexipan and hold it it place and keep it rigid).
Each long channel cavity takes the form of connected segments, each about 1-1/4" long. That broken-up shape facilitates neat division of each long-cavity product of cake or mousse into mini portions.
Flexipans� have changed the way that pastry chefs work. These flexible bakeware do not have to be greased and will still unmold without breakage. The non-stick quality also saves time and money. Because these flexible bakeware can be used at freezing temperatures, even frozen items such as ice cream, mousses, and aspics can be molded into any shape and be unmolded with ease.
